Ingredients:
- 2 tablespoons olive oil
- 1 pint cherry tomatoes (about 2 cups), halved
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup apple cider vinegar
- 2 (15-ounce) BPA-free cans white beans, drained and rinsed
- Salt (non-iodized salt, Diamond, or Mortons brands)
- 1 pound uncooked peeled and deveined medium wild caught shrimp
- 1/4 cup coarsely chopped fresh parsley leaves
- Cooked long grain jasmine brown rice
Directions:Â
- Heat the oil in a large skillet on medium-low heat.
- Add the tomatoes and cook about 2 minutes. Add the red pepper flakes and cook until fragrant, about 1 minute more.
- Pour in the apple cider vinegar and simmer for one minute.
- Mix in the beans and turn down. and season the mixture with salt as needed.
- Add in the shrimp and gently toss to combine.
- Cover and cook until the shrimp are cooked all the way through which should be under 5 minutes.
- Sprinkle with the parsley and serve immediately on top of rice.
